Moroccan Chicken

Gord made supper again tonight. This time it was Moroccan Chicken. He marinaded boneless chicken breasts in honey, sesame oil, grated lemon peel and juice, garlic, cumin, paprika, cinnamon, cayenne and pepper for about six hours.

Then he put them on parchment paper on a cookie sheet, sprinkled sesame seeds on them and then baked for about 30 minutes.

Half an hour later, they were done. I made some basmati rice and the meal was complete.


Very tasty!

Oh....I am going to try that one. It would be a good dinner for my husband & I to cook together. We did that tonight & I blogged about the book that I got the recipe from. At our house, we are into light pasta right now.

Combine in a bowl:

1/3 cup honey
1 t sesame oil
2 T lemon juice
1/2 t grated lemon peel
3 cloves garlic
1/2 t ground cumin
1 t paprika
1/4 t cinnamon
1/4 t cayenne
1/4 t pepper

Add 6 skinless chicken breasts (he used boneless) to marinade. Turn to coat well. Refrigerate for 1 to 12 hours, turning a few times.

Line baking sheet with foil. Spoon over any extra marinade and sprinkle with sesame seeds.

Bake in preheated 400F/200C oven for 30 to 40 minutes or until cooked through.

He found it in a cookbook called "Simply HeartSmart Cooking".
