Today was the day! I found this recipe on the 'net:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
You can tell I don't bake much:
- I didn't have any baking soda so I asked Gord to pick up just enough for this recipe ... it cost him $0.03.
- I discovered I didn't have a loaf pan so made muffins instead.
- I didn't have white flour so used whole wheat flour instead (and hoped it wouldn't make a difference)
I added 1/2 cup of walnuts cuz I found them in cupboard.

They look sooo good! I'm swiping the recipe, but in this heat I just can't cope with the thought of baking right now .. :)
These look absolutely scrumptious....And how inventive of you ti imprivise with the Muffin pan, the Flour and the nuts! I bet these are better than the original recipe! YUUUUUUUMMMMMMM!
The muffins look so yummy. I hate with a passion that England is now metric, nothing turns out like it's supposed to when I convert the measurements.
I want pounds and ounces back, and I want it now!
